the author states that among men who consider themselves gay and / or are considered gay by others, about 80 percent (about four out of five, on average) are actually bisexual.
Unfortunately, Baker does not quote an analogous statistic for women.
Baker is a British evolutionary biologist; his book is a fascinating science-for-the-layperson read. It's not what your parent or parents told you about sex (if they told you anything at all).

My wife was obsessed with boobs for as long as she can remember but the cultural environment in which she lived made she think that she had to be either straight or lesbian, so it took her a long time to realise she was full on bi. Now she's embraced it fully and I share her with women - it's awesome and we've called it her "sexual blossoming" as it has increased her confidence to explore her sexuality more freely.
Talking from the biology point of view: it's currently increasingly accepted that female bisexuality is particularly frequent in primates. In Bonobos for example, our closest cousins, about 60% of females are bisexual (males can be bisexual too but to a lower extent).
